Addictive Margarita Cupcakes

Ok. This is SOOO not healthy but I have family and friends asking me for the recipe. So why not share it with the world! :) They're super yummy and really bad for you (go figure). How I wish I could come up with a paleo version of these....



Margarita Cupcakes with Cream Cheese Lime Icing.

Cupcake Ingredients:
1 box of white cake mix (I used Pillsbury Moist Supreme - On sale 5/$4.00... I have parties to go to!)
1 navel orange (juiced - Approximately 1/3 c. Orange Juice)
3 egg whites
2 Tbsp oil
1 c. margarita mix (it's non-alcoholic)
2 Tbsp tequila (optional - I didn't add it. Just extra calories)

Icing Ingredients:
One large block of cream cheese (I used generic brand)
Powdered sugar (for taste/consistency)
Lime juice (fresh squeezed - approximately 3 Tbsp)
Milk (for consistency)
margarita salt or green sugar sprinkles (optional) - I didn't use this...

Directions:
1) Preheat oven at 350. Line (2) 12-well cupcake pans with paper liners (I got the green chevron print ones from Michael's for $1.50/75)
2) Mix on low: Cake mix, margarita mix, orange juice, egg whites, oil & tequila (optional) until blended.
3)Beat until light and airy. Divide batter evenly among cupcake pans. Bake for 22 mins or until toothpick comes clean. Let cool completely.
4) Beat cream cheese, lime juice, powdered sugar and milk until the you reach the desired consistency/taste. (Remember, add sugar for thickening and milk for moist. Add lime juice for flavor. ) Add icing to piping bag with star tip. Pipe frosting onto cupcakes. Sprinkle colored sugar/margarita salt over cupcakes (optional). Garnish with lime wedge and green straws (optional).

Makes approximately 20-24 cupcakes. They're like crack... SO addictive! My husband LOVES them and he doesn't like citrus-y foods. The cupcakes are pretty general.. The orange makes them sweet. The icing is cream cheese with a bite to it. I think that's the best part.
